Ingredients

1 cup butter softened

1 cup icing sugar

1 egg

1 tsp almond essence

2 1/4 cups flour

1/4 tsp salt

2 cups candied cherries halved

1 cup sliced almonds

Preparation

Preheat oven to 325. Beat butter, sugar then beat in egg and almond essence. Add flour and salt; stir until blended. Stir in cherries and almonds. Divide dough into thirds; shape into 10 inch long logs. Wrap and chill or freeze. Slice into 1/8 or 1/4 inch cookies placed 1 inch apart. Bake on top and bottom thirds , rotating and switching halfway through - about 8-10 minutes. Will yield approx. 12 dozen.
