Ingredients

1 cup rice

¼ cup butter

2 small onions, chopped

2 ½ tablespoons all-purpose flour

2 ½ cups milk

1 ½ cups grated sharp cheddar cheese

1 10-ounce package fresh spinach, washed and chopped

½ cup grated sharp cheddar cheese

Preparation

Preheat oven to 350 degrees.

Cook rice in boiling, salted water 5 minutes. Drain.

Combine all ingredients except ½ cup cheese. Place in a buttered 2-quart baking dish.

Bake 1 hour.

Sprinkle with remaining cheese during the last 5 minutes of baking.
