Ingredients

6 boneless chicken breasts

1 cup chopped mushrooms

1.5 yellow apple chopped

1.5 cup long grain rice

1/2 cup grated cheddar cheese

1/2 cup monterey jack cheese

** You can use any cheese you like

2 tbsp vegetable oil

1/4 cup chopped green onion/scallions.

2 tbsp chopped garlic

2 cup water

1 chicken bouillon cube

Preparation

In large pan ( dutcvh oven) over med. heat veg oil, mix in rice,green onions and garlic. Sautee ingreidents until rice is lightly browned pour in mushrooms and cook for about 6-7 minutes. add 2 cups water and bouillon cube and stir to mix all together. Add chicken breast whole or you can cut into strips, cover and simmer for about 20 -30 minutes on low heat - after about 30 minutes chicken should be cooked thoroughly - add cheese and stir to completely mix in.

let simmer on low for about 10 more minutes, remove from heat and serve
