Ingredients

6 oz. cooked ham, chopped

4 slices bacon, fried crisp, drained & crumbled

1 cup shredded Swiss cheese

1 cup shredded sharp cheddar cheese

1/4 c. chopped onion

1 med. tomato, peeled & chopped

2 canned jalapeno peppers, seeded & chopped

3 tbsp. minced fresh parsley

1 (10 inch) Pastry Shell

4 eggs, beaten

1 tsp. dry mustard

1/2 c. sour cream

Preparation

In unbaked pastry shell, layer ham, bacon, Swiss cheese, cheddar cheese, onion, tomato, jalapeno peppers and parsley. In small bowl, combine beaten eggs, mustard and sour cream and mix well. Pour egg mixture into pastry shell. Bake quiche at 450 degrees for 30 - 35 minutes or until filling is set. Cover edge of pastry with foil to prevent excessive browning.
