Ingredients
10 large eggs
3 tablespoons flour
1/4 cup butter
1/2 teaspoon baking soda
1 medium onion
1 medium green pepper
1/2 cup real cooked bacon bits or ham
1 pound of cheese (cheddar or swiss)
1 teaspoon salt
1/2 teaspoon pepper
Preparation
Preheat oven to 350F
Cut cheese into 1/2 inch cubes and set aside.
Dice vegetables into small pieces. Melt buter in cast iron frying pan and briefly (about one minute) saute all vegetables and bacon bits.
Separate egg whites into large bowl and yolks into small bowl. Whip egg whites at high speed until stilf peaks form. Mix egg yolks, flour, baking soda, salt, and pepper until uniform. Add sauted vegetable and bacon bit mixture and stir evenly but not firmly.
Gently, fold the yolk mixture into the egg whites, lifting to distribute mixture evenly. Do not over mix.
Pour mixture into same frying pan used to saute vegetables and bacon bits. Even out the mixture across the top of the pan. Drop the cheese chunks into the mixture randomly (some firmly so they go deeper into the mixture and some very lightly on top, so that they melt on top).
Bake for 30 min. Use toothpick to test for doneness. When done, allow 5 - 10 minutes to cool before serving.
