Ingredients

1 1-lb pkg frozen phyllo, thawed

1/3 c butter, melted

1/3 c extra light olive oil

1 pound Brie or goat cheese

1 1/2 c raspberry preserves

Preparation

Preheat oven to 400 degrees. Combine melted butter and olive oil in small bowl. Place one sheet of phyllo on work surface, keeping other sheets under a moist towel to keep from drying out. Brush with butter-oil mixture. Top with another sheet; brush with butter-oil and repeat until there are 4 layers. Cut into 16 even squares. Make 3 more 4-layer sheets. There will be 64 squares when finished. Divide cheese into 64 pieces. Place one piece on each square and top with 1/2 teaspoon preserves. Bring opposite corners together and twist to seal. Place on baking sheet and bake for 18-20 minutes or until lightly golden. Serve hot.
