Ingredients:

1 pound sharp cheddar cheese, grated (I used one cup of parmesean and three cups cheddar cheese)

½ cup butter (1 stick)

½ teaspoon ground mace (I didn’t have mace, so I used nutmeg instead0

1 teaspoon salt

¼ teaspoon cayenne pepper

2 to 3 garlic cloves, finely chopped

1 cup hot grits, cooked in buttermilk (instead of water) according to package directions

6 eggs

Preparation

Cheese Grits Casserole Makes: 10 to 12 servings

Directions:

Preheat oven to 350 degrees F. Butter a 2-quart casserole or 8 ½" x 11" baking dish. Stir the cheese, butter, mace, salt, cayenne pepper, garlic and jalapeno peppers into the hot grits. Beat the eggs well; then beat them into the grits mixture. Pour into the prepared dish and bake until set and lightly browned, 30 to 45 minutes.
