Cheesecake

Crust:

1 c flour

1/4 c sugar

1 tsp lemon zest

1 slightly beaten egg yolk

1/4 tsp vanilla

Combine flour, sugar, and zest. Cut in butter as you would for pie crust. Mix vanilla into yolk and add making a soft dough. Pat 1/3 into the bottom of a 9" springform pan and bake at 400 for 6 min. Cool. Attach sides of pan and pat in the rest of the dough.

Cheese Filling:

5 - 8 oz packages of cream cheese - softened at room temperature

1 3/4 cu sugar

3 tbsp flour

3/4 tsp lemon zest

1/4 tsp salt

1/4 tsp vanilla

5 large eggs

2 egg yolks

1/4 c heavy cream

Beat cream cheese until fluffy. Combine sugar, flour, lemon zest, salt, and vanilla and add to cream cheese. Add eggs one at a time; beating well after each addition. Gently stir in cream and pour into pan. Bake 500 for 5-8 minutes (top of cake should be golden). Reduce heat to 200 and bake for 1 hour. Cool in pan for 3 hours. Best if let to sit for 24 hours before serving. Enjoy~!
