Butter: For greasing ramekins
Raw Sugar: For dusting ramekins
3 eggs
2 tablespoons plus 1 teaspoon sugar
pinch of fine salt
1/4 cup plus 3 tablespoons whole-milk ricotta
1 cup labne
Preparation
-Preheat the oven to 300 degrees -Butter 4 3/4-cup ramekins and dust with raw sugar. -In a bowl, whisk the eggs, then beat in the sugar, salt, ricotta and labne until smooth, doing your best not to incorporate air into the mixture. -Fill the ramekins with the mixture -Cook on baking sheet until puffed around the edges and just set in the center, 15-25 minutes. -Cool on a rack, then refrigerate until chilled.
