Ingredients
4C Diced chicken (cooked)
1(1lb 4.5oz)can Pineapple chunks (drained but save juice)
2C Seedless green grapes (halved)
1C Celery (chopped)
2/3C Dry salted peanuts (coarsely chopped)
1/4t Tarragon leaves
1C Mayonnaise
2T Lemon Juice
2T Juice from pineapple
Salt & Pepper to taste
Preparation
In a large mixing bowl, combine chicken, drained pineapple (remember to reserve the juice), grapes, celery and peanuts. Taste for salt (nuts may be enough). Stir in tarragon.
In a small mixing bowl, combine mayonnaise, lemon juice and 2T pineapple juice. Gently fold into chicken mixture.
Can be served immediately.
