Ingredients

2 cups all-purpose flour

1 tbsp. sugar

1 tbsp. baking powder

1.25 tsp. kosher salt

1 stick unsalted butter, chilled and cut into 1/4 inch diced pieces

2/3 cup heavy cream

1 cup (4 oz.) grated Cheddar cheese

1 tbsp. finely chopped chives

Preparation

  1. Heat oven to 425* F. In a large bowl, combine flour, sugar, baking powder, and salt. Using a pastry blender or 2 knives held in a crisscross fashion, cut in the butter until the mixture resembles coarse crumbs.

  2. Stir in 2/3 cup cream. Add cheddar and chives and use your hands to combine; the dough should be crumbly. Knead the dough a couple of times until it comes together. Gently pat into a ball, then flatten slightly into a 1" thick disk. Transfer to a baking sheet.

  3. Slice into quarters and then cut each quarter in half. Bake for about 30 minutes or until golden.
