Ingredients
1 medium onion, grated with large holes of grater
1 cup butter
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon pepper
3 cups chicken broth
6 cups whole milk
4 cups broccoli, chopped small
1 carrot, shredded
4 cups extra sharp cheddar cheese, grated
a dash of nutmeg
a dash of cayenne powder
a dash of garlic powder
Preparation
In a saucepan, saute the onion in butter until tender. Stir in flour, salt and pepper; cook and stir until smooth and bubbly. Add broth and milk all at once; cook and stir until the mixture boils and thickens. Add broccoli & shredded carrot. Simmer, stirring constantly, until heated through. Add nutmeg, cayenne, pepper garlic powder. Remove from the heat and stir in cheese until melted.
Note: for soft broccoli steam it ahead of time.
