Ingredients

1/2 c cilantro

1/4 c oil (mild-flavored, such as sunflower)

1/4 c onion

2 T chives

1-2 jalapenos

1-2 T lime juice

2 handfuls grated unsweetened coconut

Preparation

Blend all ingredients using a food processor.

Serve as a side dish with rice. Can also be used to top chili or other bean soup.
