Ingredients

2 teaspoons sweet paprika

Pinch cayenne

1 teaspoon ground cumin

1 teaspoon sea salt

1/4 teaspoon black pepper

2 cloves garlic, mashed

1/4 cup chopped cilantro

3 Tablespoons flat leaf parsley, chopped

Juice of one lemon

3 Tablespoons extra virgin olive oil

Preparation

Combine the seasonings and herbs and blend in a blender, or pound in a mortar. Add the lemon juice and olive oil and combine, season to taste. Use to marinate a whole fish overnight, fish fillets for a few hours or as a finishing sauce.
