Ingredients

1/2 lb fun shaped Pasta (wheels, penne, bowties…)

1 pkg mushrooms

2 carrots

1 pkg tofu, cubed

sesame oil

garlic powder

red pepper

soy sauce

honey (if needed)

sesame seeds (optional)

Preparation

Boil pasta. While it is cooking, wash and cut mushrooms in quarters, peel and cut carrots into rounds. Saute these in sesame oil and seeds, if wanted. You can stretch out the sesame oil with canola if needed. when mushrooms are cooked through, season the vegetables with garlic powder, red pepper, and soy sauce. Add the tofu to the vegetables. When pasta is al dente, drain and put into a large bowl. Lightly coat in sesame oil. Add a liberal amount of garlic powder, and a bit of red pepper. Add soy sauce at the end. Add the vegetables to the pasta. Taste. If it is too spicy, add a bit of honey to tone it down. Enjoy!
