Ingredients

400g Chard, washed and chopped (keeping stalks separate)

2tbs Olive oil

1 Medium onion, chopped

2 Garlic cloves, chopped

6 Eggs

150g Cheese, grated

200ml Creme fraiche

Salt and pepper

Preparation

Preheat oven to 180C. Using a large frying fan with a heatproof handle, heat the oil over a medium heat and saute the onion, when soft add the garlic and chard stems, cook for a couple of minutes, then add the chard leaves and fry for a further 5 minutes till wilted. Beat the eggs with the creme fraiche and cheese, and season. Pour over the vegetables and continue cooking on the hob for about 8 minutes, then transfer to the oven for a further 5 minutes until the top is firm.
