Ingredients

3-4 pork tenderloins.

» Marinade:

1 cup sugar

2-1/2 tablespoons salt

1 tablespoon five-spice powder

1/4 cup ketchup

1/4 cup hoisin sauce

2 tablespoons sesame oil

2 tablespoons brandy or rice wine

1 teaspoon red food coloring

Preparation

Lightly pound tenderloins a bit flat.

Combine marinade ingredients.

Cover with marinade and mix well with hands a few minutes, so meat is well-coated and to work in flavor. Cover and refrigerate overnight.

Heat offset/indirect smoker to 300-325 degrees.

Place on smoker until 160-170 internal - about 30-45 minutes.
