Ingredients

2 cups whole wheat flour, sifted

1 teaspoon salt

1 cup water, warm

Preparation

  1. Need medium-sized bowl, rolling pin, 9-10 inch heavy cast-iron griddle or heavy skillet

  2. Mix flour and salt in bowl. Make a well in the center and add the warm water. Mix, and add water or flour to make a kneadable dough.

  3. Knead for 8-10 minutes. Cover and let stand for 30-120 minutes

  4. Divide dough into 8 pieces. Roll each piece into an 8-inch round, lightly flouring the board and rolling pin as necessary. Cover any breads with plastic that you will not be cooking immediately

  5. When griddle is hot (medium-high heat), place a chapatti on, cook for ~10 seconds then gently flip over. Cook on the 2nd side until bubbles begin to form, approx 1 minute. Then flip back to first side and cook about 1 minute longer. A perfectly made chapatti should start to balloon.

  6. Wrap completed chapattis in a clean towel to keep warm and soft.
