Ingredients
2 cakes dried noodles
150g bean sprouts
salt to taste
4 scallions
1.5 tbs peanut oil
1.5 tbs soy sauce (a mix of 生油 and 老油)
2 tbs broth
1.5 tsp ma la oil
Preparation
Boil water in a wok. Turn heat off and add noodles. Agitate noodles w/chopsticks to separate noodles. Remove noodles, drain, and reserve.
Mix broth & soy sauce in a bowl and reserve.
Cut scallions into 1 inch segments & julienne.
Wash bean sprouts. Heat wok to high, add oil, add sprouts & salt, fry a little & remove.
Heat wok to medium & add oil. Add noodles and fry, while mixing & separating with chopsticks. Continue to mix/separate for the duration of the frying.
Mix in broth/soy sauce mixture into the noodles a tsp at a time.
Add sprouts and scallions, mix in with noodles.
Remove from wok and serve. Add more soy sauce if you’d like. Put ma la oil on the side.
