Ingredients
2 lbs fresh fish fillet (any white meat fish.. ei snapper)
1 Cup carrots
1 Cup Cabbage (green)
1 Cup Onion (white or purple)
1 Cup Tomatoe
1 Cup Celery
salt & pepper to taste
3 limes juiced.. & equal parts water
Preparation
Corn fish overnight… apply coarse salt to both sides of fillets - refrigerate overnite
dice fish, gently lower fish into pot of boiling water, do not mash.. boil 5 mins, drain
dice all of the vegetables very small
gently combine cooked fish with fresh vegetables and lime juice with water.
Serve like a salsa with Tortilla Chips, or as a side dish
