Ingredients

300 gm mackerel fillet(s) cubed (or any other white meat fish)

2 cup tomato(es) chopped

1 cup onion(s) chopped

1/2 cup ketchup

20 gm olive(s)

1/8 cup olive oil

1 tsp ground oregano

1/2 tsp ground black pepper

1/4 tsp table salt

4 cups fresh lime juice

tabasco sauce to taste

1/2 cup orange juice (fresh sqeezed but without the pulp)

1/2 cup Tomato Juice

1 cup cilantro chopped

Preparation

Place the fish in a bowl, cover with lime juice and allow to “cook” in the fridge overnight.

Drain and throw out lime juice.

Mix all other ingredients adding the fish at the end.

Allow to sit for a few hours. Serve chilled.
