Ingredients

1 pound lean ground beef

1/2 pound ground lamb

1/2 pound ground pork

1 teaspoon salt

1 beaten egg white

2 teaspoons black pepper

1 teaspoon cayenne pepper

1 teaspoon baking soda

5 finely minced garlic cloves

Ready in: < 30 minutes

Combine the seasonings and grind them together before adding them to the meat. Mix all the ingredients together. Shape in thumb-sized sausages. Traditionally these sausages have no casing. Grill over wood is best, in a wood fired oven is traditional
