Ingredients

1 cup brown sugar

1 cup white sugar

1 cup butter or other solid shortening; cream these together

Add:

2 eggs

pinch salt

vanilla

1 teaspoon soda in about a tablespoon water

Add:

2 cups all purpose flour

1 teaspoon baking powder

Add:

2 cups quick oats

2 cups cereal (Special K)

1 cup + coconut

Preparation

Drop onto ungreased baking sheet and bake 10-15 minutes at 375 degrees (they do not look done when you take them out)

I like to roll mine into a ball and put an indentation in the center of the cookie and add seedless red raspberry jam before baking.
