Ingredients

4 large skinless, boneless chicken breasts

*12 skiitake mushrooms - dry sauteed in cooking sherry

*4 cloves garlic - chopped fine

*4 pitted black olives - chopped fine

the equivalent of 1 marinated artichoke heart, so pieces of heart ONLY are acceptable (rinsed and drained) - chopped fine

8 thin slices of cold

low fat brie -soft cheese

4 wedges of fresh lemon

Preparation

preheat oven to 350 degrees wash and dry chicken breasts, slit deeply but not through each breast and down lengthwise, to create ‘pocket’ to stuff the mixture of *ingredients into spread smoothly and slip in 2 slices of brie for each breast. squeeze lemon juice on and back covered for 50 minutes at 325 degrees.
