Ingredients
1 1/2 lbs skinless salmon - Atlantic or Pacific
Black pepper to taste
4 tblsp. brown sugar
4 tblsp. Dijon mustard
1 tblsp. coarse salt
Preparation
Preheat grill until very hot and place soaked plank on it. Close lid and heat 3 to 5 minutes or until plank starts to crackle and smoke. Meanwhile, pepper fish and spread with mustard and brown sugar. Carefully lift lid, it will be very smokey and salt plank with coarse salt and quickly place salmon on it. Close lid and grill salmon without turning 10 to 15 minutes. Check occasionally to ensure plank has not caught fire, spray with a water bottle to extinguish flames.
