Ingredients
1 pound cooked shells or elbows
1 can ceci (garbanzo) beans
1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar
2 garlic cloves, finely chopped
1 sweet Vidalia onion, diced
2 scallions, diced
1 red pepper, diced
1 t hot pepper flakes
salt
freshly ground pepper
Preparation
Drain beans. Add to cooked pasta. Add oil and vinegar, mix well, adjusting amounts based on taste and moistness. Add vegetables and spices.
