Ingredients

1 egg yolk

2t. Dijon mustard

2t. garlic, minced

2t. anchovies, minced or anchovy paste

Juice from 1/2 lemon

1oz red wine vinegar

5 oz salad oil

5 oz olive oil

1/2t Worcestershire sauce

Tabasco sauce to taste

Salt & pepper

Preparation

  1. Whisk together yolk, dijon, garlic, anchovy paste.

  2. Mix juice, vinegar. Whisk in half of oil, then vinegar mixture, then rest of oil.

  3. Whisk in Worcestershire, Tabasco and s&p.
