Ingredients
1/2 Lb. Medium Shrimp, peeled and de-veined, leaving a part of the tail to prevent them from curling up
1 cup of Quick Cooking Grits
1/2 Onion, chopped
2 small cloves garlic, chopped
1/2 Bell Pepper, chopped
Water to boil grits, according to package
1 Tsp. Old Bay Seasoning
Salt and Pepper to taste
1 Table spoon of olive oil
Preparation
Prepare grits according to package directions. Heat olive oil in an iron skillet. Saute vegetables until tender. Add shrimp and seasonings. Saute until shrimp are pink and be careful to not overcook them. Put some grits in a salad plate ot small bowl. Spoon shrimp mixture over them and enjoy!
