Ingredients

4T EVOO

1 onion

2 cloves garlic

6 plum tomatoes, seeded and finely chopped

1 cauliflower, cut into 1" florets

juice of 1/2 lemon

1/4 t ground cinnamon

1 bay leaf

2 oz feta cheese crumbled

S&P

Preparation

  1. Preheat oven to 375 degrees
  2. Saute onion and garlic for 5 minutes until soft. Add tomatoes, cover and simmer for 5 minutes.
  3. Add cauliflower and cook about 10 minutes, until cauliflower is crisp cooked.
  4. Transfer all to an ovenproof dish in a single layer.Crumble feta on top. Whisk together 2T EVOO, cinnamon, 1/4 C water, and lemon juice and pour over vegetables. Break bay leaf in half and add to the mixture.
  5. Add S&P and cover with aluminum foil.
  6. Bake 50 min.; oncover and bake another 10 until golden.
  7. Let stand 15 minutes and serve.
