Ingredients

1 Cauliflower

1 Onion Sliced Thin

1 2 3/4 ounce jar of stuffed Olives sliced

1 C Light Oil (Safflower, Canola)

1/2 C White Vinegar

1 t salt

1 Head Iceburg Lettuce

4oz Blue Cheese Crumbled

Preparation

Cut up cauliflower and olives and slice onions into rings. Place in a large bowl. Mix oil, vinegar, salt and pour over vegetables. Cover and marinate in the refrigerator for at least four hours. Immediately before serving add torn iceburg and blue cheese and toss.
