Ingredients
1 head cauliflower, cut into florets
8 carrots, peeled and chopped
16 ounces carrot juice
1 leek, washed and sliced, white part only
2 cloves garlic, chopped
3 yellow or zucchini squash, sliced
1 tablespoon itallian seasoning
1/4 teaspoon cayenne pepper, or to taste
1 tablespoon nutritional yeast
1 tablespoon no salt magic chef
6 slices veggie pepper jack flavor cheese
2 teaspoons smoked sweet paprika
Preparation
Pre-heat oven to 350. Place cauliflower in baking dish. Simmer carrots, leeks, garlic, squash in carrot juice until tender. Add remaining ingredients except cheese and paprika and blend in vita-mix until smooth. Pour over the cauliflower in pan and bake about 1 hour or until cauliflower is done. Place veggie cheese over top and leave in oven just until melted. Sprinkle with the paprika. Serve hot.
