Ingredients
Four 1/2-3/4 inch center cut pork loin chops
Your favorite grill seasoning to taste
For the Catarina Marinade:
4 ounces [dried] catarina chiles (guajillo or cascabel may be substituted)
8 cloves garlic (pan-roasted)
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/2 teaspoon Mexican oregano
2 teaspoons cilantro
2 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup cider vinegar
Juice of 1 lime
Preparation
Prepare the marinade 1 night before you plan to grill the chops.
1/2 hour before cooking, remove chops from marinade and discard liquid. Sprinkle chops with desired amount of grill seasoning, to taste. Over medium-low heat, grill chops 12-15 mins. per side, turning once. Enjoy!
For the marinade:
Remove stems and seeds from chiles. In a medium pot, bring 4 cups of water to a boil. Remove pot from heat and add chiles. Cover, and leave for 30 mins. Strain chiles after 30 mins.
Add all marinade ingredients, including the chiles, to a blender or food processor, and blend until smooth. Push mixture through a strainer. Marinate desired meat 12-24 hours.
