Ingredients
2 Eggs
1 Cup Sugar
1 Cup Chopped Dates
1 cup fine Coconut
(plus additional for rolling)
1 cup chopped nuts (Walnuts or Pecans)
1 tsp vanilla extract
1/4 tsp almond extract
Preparation
Butter Casserole dish Beat 2 eggs and sugar well till blended. Add Dates, Coconut, chopped Nuts, Vanilla and Almond extract. Bake mixture and stir at least twice and again once mixture is out of oven and cooling. Roll cooled mixture into balls and roll in additional coconut.
