Ingredients
2 cups cashew nuts
1 cup tomato (chopped)
1 cup carrot (chopped)
1 cup onion (chopped)
1 cup celery (chopped)
Tomato juice to moisten
1 Tbs mixed herbs
2 Tbs tamari
1 egg (beaten)
1 Tomato (sliced to line baking tin)
Parsley (garnish)
Preparation
Grind nuts Process vegetables in blender Add herbs, tamari, egg, vegetables and liquid if necessary to obtain a fairly moist consistency Place slices of tomato on the bottom of the greased loaf tin and pour mixture on top of tomato into loaf tin Bake in moderate oven for ~45 mins until firm Take out of oven and leave stand for 15 mins before turning out of tin onto a plate Garnish with parsley
