Ingredients

2 lbs. skinless chicken breasts

2 - 21/2 cups cashews

2 - 2 1/2 seedless grapes, red or green

1/4-1/2 c. green onions, diced

1 c. mayo

Salt and pepper to taste

Preparation

Saute chicken or bake it for about 45 minutes at 325 degrees. Allow to cool. Cut chicken into about 1" chunks. Mix all ingredients. Refrigerate for several hours or overnight to allow flavor to go through salad.
