Ingredients

1 pound boneless chicken breastes

2 tbsp vegetyable oil

2 garlic cloves, sliced

4 dried re chillies, chopped

1 red pepper, diced

2 tbsp soy sauce

1 bunch spring onions

6 oz cashew nuts, roasted

coriander leaves, to garnish

Preparation

  1. Dice chicken into bite size pieces.

  2. Heat the oil in a wok and swirl to coat. Add the garlic and dried chillies and fry until golden.

  3. Add the chicken and stir-fry until it changes color, then add the red pepper. If necessary, add a little water.

  4. Stir in the oyster sauce, soy sauce and sugar. Add the spring onions and cashew nuts. Stir-fry for about another 1-2 minutes. Serve garnished with coriander.
