Ingredients
2 lb Carrots
3 oz Pancetta, diced
1 small onion, finely chopped
2 tbsp chopped flat leaf parsley
beef broth
olive oil
salt and pepper
Preparation
Heat olive oil in a skillet and add pancetta and onion. Saute’ until golden brown. Add carrots and mix together. After a minute or 2, add enough beef broth to soften the carrots (continue to add more broth until carrots are cooked to your taste)…about a minute before the carrots are done cooking, add the parsley and salt and pepper to taste.
