Ingredients

2-1/2 lbs baby carrots

3 T honey

2 T butter

1 T finely chopped fresh ginger

1/4 t gr ginger

Preparation

Cook carrots in lg saucepan of boiling salted water until just tender, ~ 8 min. Drain. Stir honey, butter, gingers in lg skillet over low heat until blended. Mix in carrots. Cook carrots over Med-High heat utnil glaze thickens enough to coat, tossing occasionally, ~ 5 min. Season w/ S&P. Transfer to bowl
