Ingredients

1 bunch of med. carrots (~6)

2 cups fresh lima beans

1 clove garlic

3 T. butter

splash of white wine

1 T. chopped fresh dill

salt & pepper to taste

for quinoa:

2 cups quinoa

1/4 tsp. cumin

salt & pepper to taste

Preparation

melt 2 T. butter in skillet over medium heat.

scrub carrots, cut into 1/2" slices on the diagonal.

add carrots and lima beans to skillet.

saute for 5 minutes.

mince garlic and add to pan.

add splash of white wine, stir, cover and simmer for 5 minutes.

remove lid, add 1 T. butter, dill and salt & pepper to taste.

meanwhile, rinse quinoa under cold water.

bring 4 c. water to boil, add quinoa, cover and simmer until water is absorbed ~12 minutes.

fluff quinoa, add salt & pepper to taste and cumin, stir well.

serve quinoa topped with vegetables.
