Ingredients

1 onion

3 -4 cloves garlic

1 - 2 slices ginger

4 C. grated carrots

4 C. chicken stock

Preparation

Chop Onion, Garlic & Ginger and cook together in a little oil until garlic is aromatic. Add carrots and stock and bring to a boil. Reduce heat and cover, simmer for about 2 hours. Cool and add milk or cream. Heat, but do not boil. Taste for seasoning & serve.
