Ingredients

1 lb. carrots peeled, sliced (or you can use baby carrots)

Salt, to taste

1/2 cup melted butter

1/4 to 1/2 cup sugar, depending how sweet you like it

1 tsp. baking powder

1 tsp. vanilla extract

3 tablespoons flour

3 eggs

Preparation

  1. Cook carrots in salted water to cover until tender; drain.
  2. Combine with butter in a food processor or blender. Process until smooth.
  3. Combine sugar, baking powder, flour, eggs and vanilla in a bowl. Mix well.
  4. Add the carrot mixture. Mix well.
  5. Spoon into a buttered baking dish. Bake at 350 for 45 minutes.
