Ingredients

1/2 cup carrots grated finely

1/2 cup carrot juice

1/2 cup soft silken tofu

1 cup frozen vanilla yogurt

1 tablespoon lemon juice

1/4 teaspoon finely grated or chopped ginger

2 oranges, the juice only

pinch of salt

Preparation

Process the carrots, juices and tofu on pulse for a few second before adding the other ingredients to the blender. Add the rest of the ingredients and blend until mixed thoroughly and serve.
