Ingredients

1 C. Butter or margarine

1 C. Brown Sugar

2 C. Flour

2 tsp. Baking Powder

1/2 tsp. Salt

3 Eggs, beaten

2 C. Raw Carrots, grated

(OR 2 8 oz. jars of junior baby food carrots)

2 tsp. Baking Soda

2 T. Lemon Juice

1 T. Water

Preparation

Prepare greased 10 Cup ring mold pan.

Cream butter well. Add sugar and eggs one at a time. Add flour and everything else except the carrots and mix well.

Add carrots. Mix well and put in ring pan.

Bake at 375 degrees for 45-50 minutes. Carrot ring will be lightly brown and spring back at touch.
