Ingredients
2 Cups uncooked brown rice
1 pkg. Tofu
2 Cups shredded cheddar cheese
1 T. cooking oil
1 T. soy Sauce
1 Cup finely chopped green onions
1 tsp. pepper
Preparation
Prepare rice according to directions. While rice is cooking brown tofu and green onions in oil. When slightly brown add soy sauce and pepper. Mix with cooked rice. Add cheese and mix thorougly. Place in casserole dish and top with small amount of cheese. Bake at 350 for 20-30 minutes.
