Ingredients

1 1/2 C spelt flour or other gluten free flour

1 C oat flour

3 t baking powder

2 t cinnamon

2 t ground ginger

2/3 C raisins

1/2 C nuts, chipped

6 T coconut oil, warmed to a liquid consistency

3 T milk substitute

1 1/2 C carrots, grated

1/4 C plus 1 T honey

1/4 C plus 1 T brown rice syrup

1 egg

dash of salt

Preparation

1.Mix together all dry ingredients, raisins and nuts. 2. Mix all wet ingredients together, including carrots. 3. Combine dry to wet, making sure that carrots and raisins are well distributed. (note that honey and syrup may first be gently heated to facilitate mixing) 4. Spoon onto greased baking sheet and bake for about 8 minutes.
