Ingredients

6 large carrots, peeled and chopped

1/4 teaspoon salt

1 tablespoon butter

1/2 cup Greek yogurt

1/4 cup milk

Preparation

Bring 2 inches of water to a boil in a large pot. Place chopped carrots in steamer basker. Carefully lower steamer basket into boiling water, and cover pot. Steam carrots until tender (8 - 10 minutes). Combine steamed carrots and remaining ingredients in blender. Blend until smooth. Use CAUTION anytime you blend hot substances.
