Ingredients

3c. Cooked & Mashed Carrots

3 Eggs

1 tsp. Salt

1/2c. Sugar

2c. Half and Half

Cinnamon - to taste

Pinch of Nutmeg

Pinch of Pepper

1 Can of Sweet Peas (Optional)

Preparation

Cook Carrots and Mash. Allow to cool a bit. Beat 3 Eggs then stir in all ingredients. Pour into a ring mold. Bake like a custard, in a water bath. Bake for 1 hour at 350°. When knife comes out clean it is done. Un-mold and fill ring center with cooked sweet peas (optional).
