Ingredients

8 eggs, separated

1 1/2 cups confectioners sugar

1/2 cup matzo meal

2 cups grated raw carrots

1/2 blanched almonds, ground

grated rind of 1/2 lemon

1 TBS wine

1/4 tsp salt

Preparation

Beat yolks till thick and lemon colored. Gradually add sugar, beating until light and fluffy. add matzo meal, carrots, almonds, rink, and wine. Mix well. beat whites with salt until stiff. Fold into yolks Turn into well-greased pan. bake 300 for 1 hour
