Ingredients

olive oil 1 tbsp

3 cups carrots sliced

1 1/2 cups potato(optional)

1 large onion chopped

1 clove garlic

1/2 tsp ginger root grated

4 cups chicken broth

1/3 cup marsala wine

1/2 tsp sugar

pepper to taste; salt to tast

4 tsps fresh parsley chopped

Preparation

saute at medium heat - carrots, onion, potato, garlic and ginger in oil for 5 min add chicken stock, set to med-high, cover and boil for 30 min or until potatoes and carrots are cooked add marsala wine, sugar and pepper to taste, boil uncovered for 5 min. blend in a food processor, immersion blender etc until smooth
