Ingredients
1/2 cup sweet butter
2 medium leaks - white part only, finly chopped
6 med carrots - peeled and sliced
2 tsp curry powder
1/2 tsp cumin
1/4 tsp nutmeg
2 1/2 cups chicken stock
1/3 cup orange juice
1 cup heavy cream
1/2 tsp salt
white pepper
garlic croutons
Preparation
- Saute leaks and carrots in butter - 5 min
- Stir in curry, cumin and nutmeg
- Add chicken stock and orange juice
- Bring to a boil, cover and simmer 25 - 30min
- Cool - puree in food processor
- Stir in cream
- Season with Salt and pepper
- Garnish with croutons before serving
